Description
A quick and healthy vegetable stir fry served with a tasty peanut sauce.
Ingredients

- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1/4 cup peanut butter
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1/2 cup water
- Salt to taste
Instructions
- Heat oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add mixed vegetables and stir fry for 5-7 minutes.
- In a bowl, mix peanut butter, honey, rice vinegar, and water.
- Pour sauce over vegetables and stir to combine.
- Cook for another 2-3 minutes.
- Season with soy sauce and salt.
- Serve hot.
