Ingredients
- Whole wheat tortillas: 4 large tortillas
- Bell peppers: 1 each of red, yellow, and green
- Cucumber: 1 medium, thinly sliced
- Carrot: 1 large, grated
- Spinach or mixed greens: 2 cups
- Avocado: 1 medium, sliced
- Hummus: 1/2 cup
- Fresh herbs: 1/4 cup, chopped
- Cherry tomatoes: 1 cup, halved
- Olive oil: 1 tablespoon (optional)
- Salt and pepper: to taste
Instructions
- Wash all vegetables thoroughly and slice bell peppers into thin strips.
- Slice cucumber thinly and grate the carrot.
- Rinse spinach or mixed greens and pat dry.
- Lay one whole wheat tortilla flat on a clean surface.
- Spread about 2 tablespoons of hummus in the center of the tortilla.
- Layer sliced bell peppers, cucumber, grated carrot, and spinach or mixed greens on top of the hummus.
- Add avocado slices generously without overfilling.
- Roll the tortilla tightly, tucking in the sides as you go.
- Slice the wrap diagonally into two or three pieces for serving.
- Wrap tightly in plastic wrap if not serving immediately and refrigerate.
