Description

Veggie tortilla wraps are a delightful and healthy meal option made with whole wheat tortillas filled with fresh vegetables and spreads.


Ingredients

  • Whole wheat tortillas: 4 large tortillas
  • Bell peppers: 1 each of red, yellow, and green
  • Cucumber: 1 medium, thinly sliced
  • Carrot: 1 large, grated
  • Spinach or mixed greens: 2 cups
  • Avocado: 1 medium, sliced
  • Hummus: 1/2 cup
  • Fresh herbs: 1/4 cup, chopped
  • Cherry tomatoes: 1 cup, halved
  • Olive oil: 1 tablespoon (optional)
  • Salt and pepper: to taste

Instructions

  1. Wash all vegetables thoroughly and slice bell peppers into thin strips.
  2. Slice cucumber thinly and grate the carrot.
  3. Rinse spinach or mixed greens and pat dry.
  4. Lay one whole wheat tortilla flat on a clean surface.
  5. Spread about 2 tablespoons of hummus in the center of the tortilla.
  6. Layer sliced bell peppers, cucumber, grated carrot, and spinach or mixed greens on top of the hummus.
  7. Add avocado slices generously without overfilling.
  8. Roll the tortilla tightly, tucking in the sides as you go.
  9. Slice the wrap diagonally into two or three pieces for serving.
  10. Wrap tightly in plastic wrap if not serving immediately and refrigerate.
