Description

  • 2 cloves garlic, finely minced
  • 2 (14.5 oz) cans low sodium chicken broth
  • 1 (7 oz) can diced green chilies
  • 1 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Salt and freshly ground black pepper to taste
  • 1 (8 oz) pkg Neufchatel cheese, cut into small cubes
  • 1 1/4 cup frozen or fresh corn
  • 2 (15 oz) cans cannellini beans
  • 2 1/2 cups shredded cooked rotisserie or leftover chicken
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro, plus more for serving
  • Tortilla chips or strips
  • Monterrey Jack cheese
  • Sliced avocado for serving (optional)

Instructions

  1. Heat 1 tablespoon of olive oil over medium-high heat in a large pot. Add the diced onion and sauté for 4 minutes until translucent.
  2. Add the minced garlic and sauté for an additional 30 seconds. Pour in the chicken broth and diced green chilies, then stir in cumin, paprika, oregano, coriander, cayenne, salt, and pepper.
  3. Bring the mixture to a boil, then reduce heat to medium-low and simmer for 15 minutes, letting the flavors meld.
  4. Drain and rinse the cannellini beans. Puree half of the beans with 1/4 cup of chicken broth in a food processor until nearly smooth.
  5. Stir in the cubed Neufchatel cheese, corn, whole beans, and pureed beans into the pot. Simmer for another 5-10 minutes until everything is heated through and cheese is melted.
  6. Stir in the shredded chicken, lime juice, and cilantro. Mix well, and your White Chicken Chili is ready to serve!
