- 1 cup heavy cream
- 1 cup whole milk
- 4 ounces white chocolate, chopped
- 1 tablespoon dried lavender
- 4 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup crushed pistachios
- 1 tablespoon sugar for caramelizing
Instructions
- Preheat your oven to 325°F (163°C).
- In a saucepan, combine cream, milk, lavender, and white chocolate. Heat until chocolate melts.
- In a bowl, whisk egg yolks and sugar until smooth.
- Slowly add the warm chocolate mixture to the egg yolks, whisking constantly.
- Strain the mixture to remove lavender bits.
- Pour into ramekins and place in a baking dish.
- Fill the baking dish with hot water halfway up the sides of the ramekins.
- Bake for 30-35 minutes until set but still jiggly.
- Chill in the refrigerator for at least 2 hours.
- Before serving, sprinkle sugar on top and use a torch to caramelize.
- Garnish with crushed pistachios.
Notes
- Use culinary lavender for the best flavor.
- Make sure the water bath is hot when baking.
- Chilling is important for the right texture.
