Description

A creamy dessert featuring white chocolate and lavender, topped with a crisp pistachio crunch.


Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 ounces white chocolate, chopped
  • 1 tablespoon dried lavender
  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup crushed pistachios
  • 1 tablespoon sugar for caramelizing

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a saucepan, combine cream, milk, lavender, and white chocolate. Heat until chocolate melts.
  3. In a bowl, whisk egg yolks and sugar until smooth.
  4. Slowly add the warm chocolate mixture to the egg yolks, whisking constantly.
  5. Strain the mixture to remove lavender bits.
  6. Pour into ramekins and place in a baking dish.
  7. Fill the baking dish with hot water halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes until set but still jiggly.
  9. Chill in the refrigerator for at least 2 hours.
  10. Before serving, sprinkle sugar on top and use a torch to caramelize.
  11. Garnish with crushed pistachios.

  • Use culinary lavender for the best flavor.
  • Make sure the water bath is hot when baking.
  • Chilling is important for the right texture.
