Ingredients

  • 1 pound ground turkey or beef
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add ground turkey or beef, cook until browned.
  4. Stir in chicken broth, diced tomatoes, and Italian seasoning.
  5. Bring to a boil, then reduce heat.
  6. Add heavy cream and broken lasagna noodles.
  7. Simmer for 10-12 minutes until noodles are tender.
  8. Stir in spinach and cook until wilted.
  9. Mix in ricotta, mozzarella, and Parmesan cheeses.
