Description

A delicious mix of wild rice and cranberries, perfect as a side dish or a salad base.


Ingredients

  • 1 cup wild rice
  • 1/2 cup dried cranberries
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped walnuts
  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add onions and celery, sauté until soft.
  4. Add wild rice and stir for 2 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 45 minutes.
  7. Stir in cranberries and walnuts.
  8. Season with salt and pepper.

Notes

  • For added flavor, use chicken broth instead of vegetable broth.
  • This dish can be served warm or cold.
  • Store leftovers in the refrigerator for up to 3 days.
