- 2 teaspoons vanilla extract
- 1 cup boiling water
- Pink food coloring (gel or liquid)
- 1 cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- 2–4 tablespoons heavy cream or milk (for frosting)
- Edible eyeball candies (for decoration)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with black cupcake liners.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well mixed.
- Add egg, milk, vegetable oil, and vanilla extract to the dry mixture. Beat on medium speed for 2 minutes.
- Carefully stir in boiling water until the batter is thin.
- Pour the batter into cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes.
- Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat softened butter until creamy. Gradually add powdered sugar, mixing on low speed.
- Add heavy cream and pink food coloring, then beat on high speed for 3 minutes until fluffy.
- Transfer frosting to a piping bag and pipe onto cooled cupcakes in a swirling motion.
- Top each cupcake with an edible eyeball candy and serve.
