Ingredients

  • 1 teaspoon baking powder

  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Pink food coloring (gel or liquid)
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 24 tablespoons heavy cream or milk (for frosting)
  • Edible eyeball candies (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with black cupcake liners.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well mixed.
  3. Add egg, milk, vegetable oil, and vanilla extract to the dry mixture. Beat on medium speed for 2 minutes.
  4. Carefully stir in boiling water until the batter is thin.
  5. Pour the batter into cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes.
  6. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat softened butter until creamy. Gradually add powdered sugar, mixing on low speed.
  8. Add heavy cream and pink food coloring, then beat on high speed for 3 minutes until fluffy.
