Ingredients

- Green onions: 2, finely chopped

Instructions
- Grate the zucchini and squeeze out excess moisture using a kitchen towel.
- In a large mixing bowl, combine grated zucchini, corn, flour, cornmeal, and eggs. Add green onions, parsley, baking powder, salt, and pepper, and mix until well combined.
- Scoop out portions of the mixture (about 2-3 tablespoons) and shape into patties.
- Heat olive oil in a skillet over medium heat and fry the fritters for 3-4 minutes on each side until golden brown and crispy.
