Ingredients
- Zucchini: 2 medium (about 500 grams)
- All-purpose flour: 1/2 cup (60 grams)
- Eggs: 2 large
- Green onions: 1/4 cup, finely chopped
- Garlic: 2 cloves, minced
- Parmesan cheese: 1/4 cup, grated (optional)
- Fresh herbs: 2 tablespoons, chopped (such as parsley or dill)
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Olive oil: for frying
- Plain yogurt: for serving (optional)
Instructions
- Grate the zucchini and squeeze out excess moisture using a kitchen towel.
- In a large bowl, mix the drained zucchini with flour, eggs, green onions, garlic, Parmesan cheese, herbs, salt, and pepper until well combined.
- Form the mixture into patties about 1/2 inch thick.
- Heat olive oil in a skillet over medium heat and fry the fritters for 3-4 minutes on each side until golden brown.
- Transfer cooked fritters to a paper towel-lined plate to absorb excess oil and serve warm.

- Choose medium-sized, firm zucchinis for the best flavor.
